How-to make Basil Salt:
Ingredients: 
Fresh Basil & Course Salt
Ratio is 2/3 cup Fresh Basil (stuffed in there tightly) & 1 cup Course Salt.
Notes: I used 2/3 cup Kosher Salt (course) & 1/3 c Redmond Ancient Kosher Sea Salt.

Instructions:
1. Wash your fresh basil, dry it down as much as you can. 
Note: I put mine into the oven at 150 F for 1 hour to dry it down. 
2. Tightly pack in your fresh basil. Add into a food processor or blender. 
3. Add in your course salt.
4. Pulse until it looks like streusel topping consistency. 
5. Line a baking sheet with parchment paper. Oven at 220 F. 
6. Spread mixture evenly and place in oven for 30-45min. 
7. Take out & let cool. 
8. Add back to blender/food processor and pulse until a fine consistency. 
9. Store in a clean, airtight container, away from direct sunlight. 

Shelf Life: 6 months+

Once a tomato starts showing its first blush of color, it has reached the breaker stage. 

At that point, it can finish ripening off the vine without needing more from the plant.
